I got into a debate on how to make a cowboy casserole. Since I don't know anything about any cowboy recipes for anything, I went to the web to see what I could find. The recepe listed in the heading is the only one I found that sounded easy to make and good. Try it and let me know what you think. I will do the same.

Blue Cheese Vinaigrette Chicken:

1/4 cup butter
1/2 medium red onion
6 boneless chicken breast halves
1 (6-ounce) bottle blue cheese vinaigrette dressing
Fresh Parmesan cheese, grated

Preheat oven to 350 degrees.

1 Box (15 oz.) Seedless Raisins
1 Tsp. Salt
1 Tsp. Baking Soda
4 Tsp. Caraway
2 Cups Buttermilk
4 Cups Flour
4 Tsp. Baking Powder
1Tbsp. Veg. Shortening
2 Eggs, Beaten

Cover raisins with hot water and let stand 5 minutes. Sift together dry ingredients. Cut in shorting.

2 tablespoons margarine or butter

2 cloves garlic, finely chopped

1 small onion, finely chopped (about 1/4 cup)

3 cups whipping (heavy) cream

2 tablespoons lemon juice

2 medium rips celery, chopped (about 1 cup)

2 bay leaves

1can (14 1/2 ounces) chicken broth

3 cups milk

2 tablespoons chopped fresh parsley

1 teaspoon grated nutmeg or freshly ground sage

1/2 teaspoon pepper

2 tablespoons freshly grated Parmesan Cheese

2 Acorn Squash, cut in half

Salt to season squash

1pound bulk pork sausage (Jimmy Dean)

1cup chopped celery

1/2 cup sliced fresh mushrooms

1/4 cup chopped onion

1 egg, slightly beaten

1/2 cup sour cream

1/4 cup grated Parmesean Cheese

1/4 teaspoon salt

Scoop seed from squash halves.

Place squash in either a Dutch oven, or 9x12" baking pan, lightly salt the inside of squash.
